Masak - masak Melayu ~ Ayam masak kicap @ Chicken in Soy Sauce
Tomato ketchup is used in this recipe so there’s a sour – ish taste to the gravy.
Ingredients:
1. 1 Large onion, cut into wedges
2. 2 red chilli, remove seeds and sliced
3. 2 medium potatoes (subjective), cubed
4. A handful of baby carrots (subjective)
5. ½ chicken, chopped in 8 pieces (subjective)
6. Sweet soy sauce (cap Kipas), 1 cup (subjective)
7. Tomato ketchup (Maggi), 2 Tbs (subjective)
8. Salt
9. Cooking oil
10. 1 cup of water (subjective)
Preparation:
1. Heat oil to deep – fry the chicken, and fry till the chicken is slightly brown. Then toss in potatoes and fry for a few minutes more. Both are not fully – cooked. Transfer to a bowl lined with baking sheet.
2. Heat 3 Tbs oil in a saucepan, then toss in the chilli and onion, and cook till fragrant.
3. Add in the carrots, then the chicken and potatoes.
4. Add in soy sauce and tomato ketchup, then stir to coat all evenly.
5. Add some water to thin the gravy as you wish and season with salt to taste.
Other vegetables that you can add are tomato, celery and capsicum. Amount is pretty much subjective.
