I am making... Basic potato salad

This is one of my favourite, high carb snacks and very easy to make with simple ingredients.


Ingredients:

1. 4 potatoes, peeled, cut into halves
2. 1 carrot, peeled and cut half
3. 1 hard – boiled egg
4. Celery, 1 stalk
5. 1 cup of grapes, any kind, sweet and seedless
6. Parsley, 1 handful, chopped fine
7. Mayonnaise, ½ - 1 cup
8. 1 tbs mustard (or more if you like the zest)
9. 1 small dill pickle, chopped fine (more or less)
10. Pinch of salt




Preparation:

1. Boil the potatoes and carrot.
2. Chopped the amount of celery you feel like having
3. Mash the egg. Then, in a bowl fold it in with mayonnaise, mustard, dill, parsley, celery and grapes
4. When the potatoes and carrot are done, diced them nicely and toss them in the bowl with others.
5. Season with salt.

Note: poke around the potatoes to make sure they are just nicely cooked, not too soft or they’ll be mashed when you toss them around in the bowl and you’ll have an unappetizing lump staring back at you.

Sometimes I add in boiled sausages, macaroni, red apple, prawn, raisin or fruit cocktail (drain the juice first) but you can try your own stuffs too.
