Masak - masak Melayu ~ Kacang panjang dengan telur @ Fried beans and eggs


Ingredient:
1. Long beans, when chopped up will give you 2 (standard) cups.
2. 2 eggs
3. ½ carrot, sliced
4. 1 chili, chopped
5. 1 onion, chopped
6. 5 cloves of shallot, chopped
7. 2 cloves of garlic, chopped
8. 2 tbs oil
9. pinch of salt



Preparation:

1. Heat oil in wok
2. Toss in ingredient 4 – 7, stir till fragrant
3. Toss in the long (now short) beans and carrots (later if you like them crunchy), wait till they soften or change colour slightly.
4. Make a centre hole and break in the eggs then quickly and fervently fold in the vege and stir so that the eggs are scrambled and dry.
5. Season with salt, off the gas.

Serve 3 – 4. Done. Preaparation time should be somewhere around less than 30 minutes. Sometimes I just eat this with steaming hot rice and soy sauce whenever I’m too lazy.
