I am making ~ Roasted tomato with mozarella cheese and basil

I love tomato, it's an easy vege that can be eaten on it's own, baked, made into soup, pureed, used in pasta sauce etc. This super - easy recipe is prepared with minimal ingredients and is used as an accompaniment to my roast chicken.

Ingredients:
1. As you can see above, 4 tomatoes with the top sliced horozontally and the seeds detached from their core.
2. Grated mozarella cheese, 1 - 2Tbs per tomato
3. Salt and pepper to taste
4. Fresh or dried basil. In my case, 1 tbs dried basil per tomato

You also need some aluminium sheets for the wrapping

Preparation:
1. Season the seeds with salt & pepper & basil then stuff them back in.
2. Stuff the mozarella cheese into the core next

3. Cover up with the sliced top and wrapped nicely with the foil
4. Bake in a preheated oven at 180 degree for 10 - 15 minutes or till the tomatoes turn soft. Alternatively you can roast them on the barbeque grill.

Serves 4.
