I am making ~ Homemade beef burger

We screwed up our diet majorly when we decided to make burgers for iftar @ breaking the fast. Instead of the original healthy version, our calorie count was totally out when everyone started piling up ideas and toppings on the burgers. So the end product was a combo of 2 pieces of homemade beef burger patties with toppings of turkey ham, cheese, sauteed onions and enoki, lettuce, pickled cucumber, loads of tomato ketchup, mayonnaise and mustard, all piled between the buttered - and - grilled burger buns.
Ingredients (3 pax):
1. burger buns
2. 2 onions
3. 1 large enoki
4. turkey ham slices
5. sliced / shredded cheese (mozarella / cheddar)
6. pickled cucumber
7. lettuce
8. 400g minced beef / lamb / chicken
9. Sugar, salt and pepper
10. cooking oil
11. tomato ketchup, mayonnaise, mustard or whatever dressing to your liking

Preparations:

Butter and grill the burger buns, then set them aside.

For the sauteed onion and enoki, you need 1 onion and 1 large enoki, cut them into thin slices. In a pan, heat 1 Tbs of oil, sautee the enoki first then remove. Next, sautee the onions over low heat till they are soft then add 1 Tbs of sugar or brown sugar. Coat well and continue cooking until the onion turns brown but not burnt. Caramelized onions are the best! :D

 As for the turkey ham, cut them into strips and grill them to your liking. I like to have some char marks and crispy texture so I usually take my time with them.



For the patties:
1. 400g minced beef / lamb / chicken
2. 1 onion, finely chopped
3. salt and pepper (black pepper)
4. some cooking oil for the frying

 Combine all except for the oil then form your patties. How I did mine was to take a chunk of the mix, made it into a ball shape then flattened it between my palms as flat as I can. While doing that heat the grilling pan and brush some oil on it. Lay the patties on and grill them to your liking. Make sure to press down the patties as they tend to rise up and swell.

I used Edam cheese (we were in gourmet mood) but you can opt for mozarella or cheddar slice or grate. When the patties are almost cooked, pile the sauteed onions onto half of them then place the cheese on top of the onions and let it melt.




Assembling the burgers:
1. Place the lettuce on the bottom burger bun, then the ketchup, mustard and mayonnaise.
2. Then place the patty with the melted cheese and onions on top
3. Top that with enoki
4. On the other half of burger bun, place the other patty without the onion, then top it with the turkey ham.



Side note: Not something to eat in front of potential spouse or in laws. VERY messy but fun.
